What country should I pick?

I would say that you pick Swaziland.

Only because you can make up stuff and no one will care about proving you wrong. The only reason I recommend this is because if you really wanted to research and prepare, you can go do that like right now. You can't learn to be confident in what you're saying (truth or not) over-night. Take this time to challenge yourself by putting your impromptu skills on the line. What do you have to lose anyways, you're going against ur schoolmates anyway, right?

I'm commenting a lot today. I would suggest not going for Belgium. It's boring, and doesn't have an opinion on anything.

That leaves you with Swaziland or India. I agree with masterDEbator, you could probably BS your way through with that country. India is a cool option too -- it doesn't have a major opinion on a majority of the topics, but its better known/respected than Swaziland. It could give you a leg up? Its also easier to research if you are as anal as I am.

I disagree! I would definitely go for Belgium as they have a very special connection with the diamond industry - De Beers, the global diamond giant is based in South Africa, but all the corporate offices and the suits are in Belgium. Furthermore, the Belgians have a long history of plundering along Africa, stationing themselves in the diamond rich regions of the Congo, Rwanda, etc. That puts Belgium in a very difficult defensive position, but makes for some fun Model UN! You will have to, on one hand protect a major industry in your country, and on the other push for so called human rights while protecting property rights of multinational corporations in third party war torn countries.
